Better Homes & Gardens’ Onion-Soup Roasted Potatoes

I’m always looking for new and different roasted potato or sweet potato recipes because I love them for dinner side dishes. I came upon this one from BHG that only needed 3 ingredients–I’m in! I used 1 large sweet potato (washed but not peeled) and subbed in olive oil for the veggie oil. The prep was definitely less than 10 minutes, about 3 minutes I’d say. I prepared it in an 8×8 glass pyrex dish that I lightly sprayed with PAM first.

35 minutes was the perfect time and those potatoes were extremely hot! I had to let them cool down about 5 minutes before eating them. They were crispy on the outside and creamy on the inside. The onion soup mix was a really great complement to the sweet potato. It was a very fast, very simple, and very tasty side. Here are my potatoes: #bh&g #betterhomesandgardens

Onion-Soup Roasted Potatoes

Makes: 2-3 servings
Prep: 10 mins
Cook: 35 mins

Ingredients

  • 1 envelope Lipton® Recipe Secrets® Onion Soup Mix*
  • 2 medium all-purpose potatoes, cut into large chunks
  • 2 TBSP vegetable oil

Directions
1. Preheat oven to 425ºF. Combine all ingredients in an 8×8-inch baking or roasting pan.
2. Bake, stirring occasionally, 35 minutes or until potatoes are tender and golden brown.

*Note: Also terrific with Lipton® Recipe Secrets® Savory Herb with Garlic, Onion Mushroom or Golden Soup Mix.
