Everyday Cooking Adventures’ Cheesy Flatbread with Avocado Salsa

This is a great recipe when you want to make dinner quickly. You could use foccacia bread or something similar if you didn’t have naan but I like store-bought naan and look for different ways to use it. This is like a pizza but a mixture of Mexican salsa flavors and Indian bread.  I really like it even though the ingredients are a bit of a medley. The cheese is really up to your own tastes but paneer is very mild so it doesn’t overpower all the other flavors and mozzarella melts well.

Using rotisserie chicken and bottled lemon juice helps cut the time and makes this a fast dinner option. The salsa alone could be made as a dip with chips or put on fish or baked chicken as well. Here’s my flatbread and my salsa:

Cheesy Flatbread with Avocado Salsa

Serves: 2

Total Time: 20 minutes
Ingredients:
  • 1 avocado, ripe
  • 1 tomato
  • garlic powder
  • salt & black pepper
  • red pepper flakes
  • bunch of cilantro leaves
  • 2 Tbsp lemon juice
  • cheese of your choice, shredded or cubed (I’ve used Paneer or Mozzarella)
  • naan, 2 whole pieces
  • olive oil
  • bunch of spinach, washed and chopped
  • rotisserie chicken, about 1 breast, shredded
Directions:
 
1. Preheat oven to 350ºF.  Place the two pieces of naan on a baking sheet. Drizzle with a very small amount of olive oil.
2. Top the Naan with spinach, cheese, and shredded chicken.
3. Place in the oven for 5-8 minutes, just enough to melt the cheese a little but not to harden the bread.
4. Meanwhile, chop the tomato and avocado and place in a small bowl. Add the lemon juice, salt, pepper, cilantro, a good shake of red pepper flakes, and garlic powder by the teaspoonfuls, tasting and adjusting the seasoning as needed.
5. Serve the salsa in large spoonfuls alongside the flatbread on each plate.
