Everyday Cooking Adventures’ Egg, Cheese, & Sausage Sandwich

This is one of my favorite breakfast recipes. It’s a knock-off of the similar fast-food creation. It takes two pans and no chopping, dicing, or mincing required. It can be made in about 15 minutes and is a very filling start to your day. You can use egg whites instead of the whole egg to make it healthier and any type of sausage, turkey-sausage, tofu-sausage whatever will work. I also like the generic slice of American cheese but any cheese of your liking is perfectly fine. Here’s my breakfast sandwich:

INGREDIENTS

  • 2 eggs, Organic free-range preferred
  • 2 English Muffins
  • 1 TBSP milk
  • cooking oil
  • 2 sausage patties (pork, turkey, tofu, whatever you like!)
  • 2 slice cheese, American is my preference
  • fresh ground pepper
  • mayo if desired

DIRECTIONS

1. Preheat the oven to 300ºF. Prepare two round sausage patties about the diameter of the English Muffin and place in a small frying pan that has been sprayed lightly with cooking oil. Heat the pan to medium-high heat, warm enough to cook thoroughly but not to burn the sausage. Sausage takes about 8 minutes, but depends on brand and size, and you need to flip them half-way through.

2. While the sausage is cooking, warm a second small frying pan, sprayed lightly with cooking oil, to medium heat.

3. Use a fork to whip the two eggs and the milk in a small cup or bowl until thoroughly blended. You can choose to use the whole eggs or just egg whites etc. If you use just egg whites you may want to use 3 eggs or else there won’t be enough for the sandwiches.

4. Toast the English Muffins (4 pieces= 2 tops & 2 bottoms) very lightly in the toaster to make them a little crunchy. Then transfer to a baking sheet or piece of foil and place on slice of cheese on each bottom half. Toast them for about 3 minutes or until cheese is melted. Place on a plate.

5. While the Muffins are toasting, pour the egg mixture in the warmed frying pan and let it cook just as you poured it for about 30 seconds, then cook similar to making an omelet. Scrap a bit and then let the egg cook, then scrap the edges some more, in order to make two distinct semi-circular/oval egg patties.

6. On the top half of the English Muffins you can spread a little mayo if desired. Not required!

7. Use a paper towel to dry the sausage patties once fully cooked and taken out of the frying pan. Place the sausage patty on the bottom English muffin that has the cheese on it. Top with the egg patty and shake a little fresh ground pepper on top. No salt is needed. Finish with the Muffin top and voila! Serve immediately.
