McCormick’s Easy Steak Fajitas

Tonight, I was looking for a fast meal without much prep work involved. Yesterday, I had a busy but enjoyable day that ended with a phenomenal four course meal with wine pairings at Schmidt Family Vineyards so tonight I wanted something a little less extravagant.

Schmidt Family Vineyards’s dinner included dishes like fresh caught scallops atop fennel and grapefruit compote to a seared salmon drizzled with a creamy beurre blanc sauce and the most incredible crispy polenta. Oh and the salad with homemade sweet and tangy balsamic vinaigrette and melt-in-your-mouth grape halves was worth the price alone! See my Wine Blog Page for reviews on some of the wines we had with the courses last night.

Anyways…back to tonight’s meal! This was definitely true to its name, easy to make, and very fast to throw all the bits and pieces together. The fresh California Haas avocado was a wonderful accompaniment to the spicier onions and beef. I served the salsa, sour cream, and shredded cheddar on the side at the table. This is a perfect weeknight meal and would also be good for a larger family as everyone can top their fajitas as they so wish. Here’s my fajita:
