Creamy Risotto & “The Chew” Cookbook Giveaway

This past late spring/early summer, my mom and I enjoyed our annual New York City trip. We always visit the museums, partake in the Broadway shows, and attend the New York City Ballet and ABT. But, this year, we went to a new site, Mario Batali and Lidia Bastianich’s amazing gourmet mega-market and restaurants, called Eataly NYC. While there I literally loaded up all my arms could carry of dried pastas and risotto rices. I used one of these precious bags of beautiful and authentically Italian arborio rice to perfect my risotto recipe. Alternating between cream and broth or water, you end up with a consistently tender and flavorful risotto rice dish.

Creamy Risotto

Recipe By: Everyday Cooking Adventures, 2014

Serves: 2

Ingredients:

  • 2 Tbsp. olive oil
  • 8 oz. arborio rice
  • 16 oz. chicken broth
  • 1/2 pint heavy cream
  • Salt and fresh ground black pepper

Directions:

1. In a large fry pan heat the olive oil over medium. Add the rice and sauté to toast the rice about 2 minutes, stirring frequently.

2. Lower heat to medium-low and stir in 1 1/2 cups of chicken broth to combine. Adjust heat to simmer, stirring occasionally, until all liquid is absorbed, about 4 minutes.

3. Add in 1/4 cup of heavy cream, stirring, until absorbed on a low simmer. Alternate with chicken broth and heavy cream over about 15-20 minutes, allowing liquid to be absorbed before adding in more. Rice should be tender but not mushy. Continue to add in a little water if cream and broth are used up and rice is still not tender. Season with a little salt and pepper. You may add a little Parmesan cheese, fresh herbs and/or vegetables of your choice as desired at serving time.

    i like clinton kelly, also, loves the recipes you post- i’ve tried quite a few! and i keep the ones i like in a recipe folder. they are always pretty simple to make and combine great ingredients! the martha stewart baked cabbage recipe you did, i swear i could eat that everyday! sooo good and the baked enchilada skillet dinner!
