Everyday Cooking Adventures’ Festive Flag Cake

Yesterday was my dad’s birthday (Happy Birthday Dad!) and seeing as how it falls within the week of the Fourth of July holiday, my mom and I decided to use some Pinterest inspiration to make a birthday flag cake. Of course you could make whatever cake you want and just use this idea to decorate but the white frosting part is essential for the flag’s “stripes”. It was quite simple and very pretty to look at.

My only tip would be to make sure the strawberries are really dried off with paper towels otherwise they can drip a little red juice onto the frosting while left in the fridge. Festive Flag Cake

Recipe by: Everyday Cooking Adventures, 2013

Makes one 9″x13″ cake

Ingredients:

  • 1 box white or vanilla cake mix
  • 1 can vanilla or white frosting
  • 10-12 fresh strawberries or raspberries, rinsed & dried (if large strawberries, slice in half)
  • 20-30 fresh blueberries, rinsed & dried

Directions:
1. Prepare cake mix as directed in a glass 9″x13″ greased baking dish. Bake in oven and let cool on wire rack for at least 2 hours or overnight.

2. Once cake is completely cool to the touch begin frosting. If you left it in the baking dish, just frost the top. If you have removed it from the baking dish, frost the sides as well.

3. Using the blueberries, place carefully in the top left of the rectangle to make a square. Squish them in to fit as many as possible. See photos for example.

4. Using the strawberries and/or raspberries, place them carefully in rows leaving white frosting lines in between. See photos for example.

NOTE: If not serving right away, place in the fridge to keep cool. If leaving for more than a couple hours in the fridge, cover carefully with foil not allowing it to touch the top of the cake.
