Everyday Cooking Adventures’ Slow-Cooker Beef Bourguignon

I have finally created the Master Beef Bourguignon Recipe! Get excited people, I know I am! You know how sometimes beef stew comes out with a thin soupy sauce? No longer! Now you can have a nice thick, but not too thick sauce. Or sometimes the beef is tender and lovely but the rest of the stew has absolutely no taste? Never again! This recipe gives you zesty and sweet and salty all combined into one delicious and perfect sauce. Also, the best part is you can throw this all in the slow-cooker before work, leave for the day with the stew simmering on the low setting and come back to dinnertime all done for you. The beauty of slow-cookers! Enjoy!

Beef Bourguignon

Makes: 4 servings

Prep Time: 30 minutes

Cook Time: Low Setting: 10 to 12 hours OR High Setting: 5 to 6 hours

Ingredients

  • 1 pound boneless, beef chuck roast, cut into 3/4″ cubes
  • 1 tablespoon vegetable oil
  • 1 cup chopped yellow onion (2 medium onions)
  • 3 cloves garlic, halved
  • 2 cups 3/4-inch pieces carrot (4 medium carrots)
  • 1 fennel bulb, sliced lengthwise into 1/4″ wedges
  • 1 packet Knorr French Onion powdered dip mix
  • 1 1/4 cups red wine
  • 1/2 cup beef broth
  • 6 oz. tomato paste
  • 1 Tbsp. Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 bay leaves
  • 3 cups cooked egg noodles or prepared mashed potatoes

Directions

1. In a 4-quart Dutch oven, heat the vegetable oil over medium heat. Add the beef cubes, chopped onion, and garlic to Dutch oven. Cook and stir until meat is brown and onion is tender about 5 minutes. Remove from heat.

2. In a 3 1/2-quart or 4-quart slow cooker add the fennel and carrots. Sprinkle with the Knorrs French Onion packet. Add the meat, onion and garlic mixture on top. Slowly, pour in the wine, broth, tomato paste, Italian seasoning, salt, pepper, and bay leaves. Stir gently to combine.

3. Cover and cook on low-heat setting for 10 to 12 hours or on high-heat setting for 5 to 6 hours or until meat and vegetables are tender. Discard bay leaves. Taste for any additional salt and pepper that may be necessary. Serve over the noodles or mashed potatoes.
