YummyLife’s Chicken, Mozzarella, Marinara Sandwich

I made these for lunch today with my leftover white and dark chicken meat from my whole chicken the other night. I had cheese rolls which were just like a french roll but with a cheesy crust. I also had leftover pizza sauce from my homemade pizza a night ago. So I was able to use up some leftovers for this recipe, which I love because it means more space in the fridge. I used shredded mozzarella instead of sliced. The sandwich was mouth-watering and filling. We both loved it!

Parmesan Chicken Sandwich

Servings: 1 sandwich, depends on size of roll

Ingredients

  • 1 cooked chicken breast (or a plain baked or grilled breast)
  • 1 sandwich roll, split
  • Roasted red pepper (out of a jar is fine)
  • Marinara or tomato sauce
  • Parmesan cheese, grated
  • Provolone or mozzarella cheese, sliced or grated

Directions
1. Heat a little olive oil in a medium-hot skillet and add the chicken breast to heat on both sides until chicken is warm throughout.

2. Open the sandwich roll and lay on a broiler-proof pan. Brush each side with olive oil and broil until lightly browned. Add ingredients to the bottom side of the roll in this order: heated chicken breast, roasted red pepper, marinara sauce, grated Parmesan cheese. Place provolone or mozzarella cheese slices on the other side of the roll.

3. Return to the broiler and toast until cheese on both side is melted and lightly browned. Put the two halves together and enjoy. Serve with a side of marinara sauce for dipping.
