Betty Crocker Quick Chicken & Dumplings

I love down-home cooking and this is perfect for a hearty, comforting meal for two (or double it for four). It is simple to make and using frozen veggies makes it even easier. Perfect for a cold day to warm your belly and fill you up, I served this with just a green salad on the side.

If you are mixing the dough for the dumplings and don’t feel you have enough you can always just add a little more milk and Bisquick and ensure your dough is not dry but not watery so adjust as needed. The resulting white sauce and plump dumplings are rich and divine.

Quick Chicken and Dumplings

Makes: 2 servings

INGREDIENTS

  • 3/4 cup milk
  • 1/2 cup frozen green peas and carrots
  • 3/4 cup cut-up cooked chicken, or rotisserie chicken in large shredded pieces
  • 1/2 can condensed creamy chicken or mushroom soup (about 6 oz.)
  • 3/4 cup Original Bisquick® mix
  • 1/4 cup milk
  • Paprika, if desired

DIRECTIONS
1. Heat the 3/4 cup of milk, peas and carrots, chicken and condensed soup to boiling in 2 1/2-quart saucepan, stirring frequently.

2. Stir Bisquick mix and 1/4 cup milk until soft dough forms. HINT: For tender dumplings, don’t overmix the dough. Mix just until moistened.

3. Drop dough by 4 large spoonfuls onto chicken mixture (try not to drop directly into liquid). Sprinkle with paprika.
4. Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer.
