Budget Savvy Diva’s Parmesan-Roasted Green Beans

Well, Thanksgiving is over and I hope you all had as nice a dinner as we did this year. With the Super Bowl of Food Holidays over, it’s back to the normal routine around here. If you’re anything like me you get bored by the same old vegetable sides each week with dinner. I do broccoli, green beans, and asparagus in some form but usually just steamed with salt and pepper and a little butter ALL THE TIME! When I find a recipe that can elevate my usual routine to a slightly more interesting level I’m all for it.

This recipe is very, very simple but don’t let that fool you because the results are extraordinarily tasty. The beans get slightly softened and covered in cheesy goodness. They all stuck together when I took them out of the oven so you have to break them up a little with a spatula or fork before serving. But, other than that there’s not much you have to do.

This recipe would be perfect for the holidays because it’s fast, easy and can slide into the oven on the bottom rack while something else (such as a turkey or roast) bakes above it. I did this with a salmon filet baking above them. Enjoy!

Parmesan-Roasted Green Beans

Recipe from: Budget Savvy Diva
Serves: 2
Hands-On Time: 5 minutes
Total Time: :20 minutes

Ingredients

  • 8 oz of green beans
  • Olive oil
  • Salt and pepper
  • Parmesan cheese

Directions
1. Preheat oven to 400ºF. In a medium size mixing bowl place green beans (trim off ends), small amount of oil (enough to coat beans), pinch of salt and pepper. Mix until everything is covered.

2. Lay green beans onto a cookie sheet and sprinkle a “healthy” amount of cheese on top. Bake for 15 minutes. Green beans should be crisp on the outside and tender on the inside. You can garnish with extra cheese if you like.
