Rachael Ray’s Marinated Grilled Flank Steak

Yesterday was Sunday Night Football so I had some friends over for dinner and to watch the game. I had a large piece of flank steak in the fridge and in the past have always enjoyed marinating it for a few hours before cooking time. The marinade helps to make the meat less chewy and infuses it with some subtle flavor so nothing more is needed at serving time, such as a sauce or dressing.  I let the flank steak marinade in an 8″x11″ pyrex in the refrigerator for about 4 hours. This helped it so that I could enjoy my company when they were at the house and not stand in the kitchen shouting over to them.

We grilled the flank steak on the BBQ about 7 minutes on each side for medium-done and sliced it up on a large carving board. It was the perfect main dish for Game Day and serving a small group. The marinade gave it a subtly smokey flavor and it paired nicely with My Game Day Roasted Potatoes with Pancetta & Scallion. Here’s our flank steak: #gameday #Rachaelray

Marinated Grilled Flank Steak

Ingredients
3 cloves garlic, finely chopped
1 tablespoon grill seasoning blend (recommended: Montreal Steak Seasoning)
1 teaspoon smoked paprika, ground chipotle chili powder or ground cumin
2 teaspoon hot sauce – eyeball it
1 tablespoon Worcestershire sauce
2 tablespoons red wine vinegar, 2 splashes
1/3 cup extra-virgin olive oil
2 pounds flank steak

Directions
1. Mix garlic, steak seasoning, smoked paprika, chipotle or cumin, hot sauce, Worcestershire sauce and vinegar. Whisk in extra-virgin olive oil. Place meat in shallow dish and coat it evenly in marinade. Let stand 15 minutes.

2. Heat a grill pan or outdoor grill to high heat. Grill flank steak 6 to 7 minutes on each side. Remove flank steak from grill and let juices redistribute before slicing. Thinly slice meat on an angle, cutting the meat against the grain.
