Everyday Cooking Adventures’ Cranberry Cinnamon-Streusel Muffins

Thanksgiving was a week ago, but I still had some cranberry sauce leftover. I have found a new love of leftovers in my older days 🙂 and try to use up anything still in my fridge. Accordingly, that leftover cranberry sauce was going to get used up! I had a box of my favorite muffin mix in the pantry and thought…hey, now that’s a good idea.

Using the box muffin mix saves a lot of time, but if you’re a stickler for homemade baked goods, you can really use any basic muffin recipe and just add in some ground cinnamon, and make a streusel topping yourself out of brown sugar, a little butter, and flour. I’m all about the easier the better when it comes to making things that I know only I will be eating though.

The cranberry sauce made the muffin batter a beautiful rosy color and I was excited for the end result. The muffins came out very festive and perfect for the Christmas holiday season. Making a lot of these would be a perfect homemade gift for the office, friends, and family. The cranberries come out much sweeter when baked and the streusel topping is light an added sweet and heavenly bonus in each bite. YUM! Here are my muffins:

Cranberry Cinnamon-Streusel Muffins

Recipe By: Everyday Cooking Adventures, 2013

Makes: 1 dozen muffins

Ingredients:

  • Paper or foil muffin cups, optional
  • Cooking spray, optional
  • 1 box of Krusteaz or Betty Crocker Cinnamon-Streusel muffin mix
  • 1 egg
  • 2/3 cup water
  • 1 cup cranberry sauce leftovers OR make using this Cranberry Sauce recipe
Directions:
1. Preheat oven to 350ÂşF. Put paper muffin cups in the muffin pan or spray each cup with cooking spray.
2. In a large bowl, gently stir together the muffin mix (minus the streusel topping bag), egg and cranberry sauce, inluding its liquid, using a wooden spoon until combined. Slowly add the water a little at a time because depending on how juicy your cranberry sauce is, you may need to reduce the amount of water you will add. The batter should be thick but not dry.
3.  Add 1/2 the bag of streusel topping into the bowl and stir until just combined. If the muffin batter seems dry add another couple tablespoons of water until moistened but not runny.
4. Using a spoon, scoop the batter evenly into muffin cups. Top each muffin with a little streusel topping, patting down with the back of a spoon, until the other 1/2 of the streusel bag is used up. Bake on middle oven rack for 20 minutes. Let cool for 20 minutes and enjoy or store in air-proof container up to 5 days.
